Indigenous yeast and old oak barrels add a richness and complexity to this Sauvignon. Its pale straw in colour, with a reductive notes of nuts, charred toast and lemon pith, the grass and herbal notes taking a back seat. The palate is ready in texture, buoyed by crystalline acidity. There's length, balance and a long lemony finish. A solid pairing with rich, herb-flecked dishes.
The barrel-fermented and matured 2017 Wild Sauvignon remains a bit green in character for this taster. The notes of sweet pea and capsicum come too close to asparagus and green bell pepper, despite grapefruit nuances and the complexity-invoking influence of wild yeast and French oak barrels. It's medium-bodied and silky in texture on the mid-palate, then finishes tart, underscored by lemon-lime-grapefruit acids. Other recent vintages have been more pleasurable.
This Wild Sauvignon features toasty accents to it layers of ripe nectarine and pineapple. It's medium-bodied, reasonably rich and textured on the palate, then it weakens a bit on the finish.
The 2021 Wild Sauvignon is superb; the wine has all the tilt and lift of Sauvignon Blanc and all the richness from the maturation vessels, plus something extra from the low-yielding but excellent 2021 vintage. This is an exciting wine that is already so balanced and poised. Excellent.
