The Boucauds plot is located very close to the estate, on clay-limestone soils of white earth and marl. The vines are 10 to 50 years old, and face southeast, at an altitude of 200 to 235 meters. All these elements bring both richness and minerality to this cuvée.
After manual harvesting, the grapes are sorted to keep only the best. The pressing is carried out pneumatically, before a static cold settling. Vinification is carried out in stainless steel vats and also in barrels (at a proportion of 80% for the vats and 20% for the barrels). Aging then lasts 7 to 8 months on the lees with possible stirring.
This wine reveals aromas of white fruits and citrus fruits, it is a sauvignon that is both solid and full-bodied, with good acidity and fine minerality. We of course advise you to pair this wine with fish and shellfish.
