Another arrival from the US, where specialist gins made in microdistilleries across the country have really invigorated what was a previously moribund category. Death's Door is made with organic red winter wheat on Washington Island in Wisconsin, and has been bottled at a higher-than-usual strength, so use a bit less or add more tonic. Death's Door Gin has a surprisingly simple botanical mix of juniper berries, coriander and fennel. Using a mix of juniper berries that includes the wild juniper of Washington Island with coriander and fennel seeds, Death's Door Gin is able to showcase how complementary and complex simple expressions can be.

Ingredients:
- 60 ml Death's Door Gin
- 30 ml fresh lime juice
- 15 ml simple syrup
- 3-4 fresh basil leaves
- 1 dash of absinthe

Instructions:
1. In a shaker, muddle the basil leaves with the simple syrup.
2. Add Death's Door Gin, fresh lime juice, and a dash of absinthe.
3. Fill the shaker with ice and shake vigorously for 10-15 seconds.
4. Strain the mixture into a chilled glass filled with ice.
5. Garnish with a fresh basil leaf and enjoy.
