Vassaltis was established in 2015 by Yannis Valabous, a young entrepreneur who decided to leave his career in financial services in London to follow his dream to create a winery in his childhood holiday destination: the island of Santorini. The estate is located in Vourvoulos on the coastal road which leads to Ola in the northwest of the island.
The history of the domaine begins in the 1980s when Yannis' father bought a house on the island with four and a half hectares of vines. After leaving and working abroad in the UK, Yannis returned to Greece in 2010, in the middle of the economic crisis, determined to make his contribution to the country's recovery. He then inherited the property in 2012 and decided to revive the family vineyards building modern facilities and creating a premium boutique winery.
Along with oenologist Élias Roussakis and winemaker Yiannis Papaeconomou, Yiannis created a team with a shared vision of producing the greatest wines in Santorini. The estate produces three types of wines, one qualified as IGP Santorini, Nassitis (35% Athiri, 30% Aidani and 35% Assyrtiko) and two PDO Santorini, which are 100% Assyrtiko. One of them is fermented and aged in tanks and the other aged in wood in 500 and 225 litre barrels for three months. With only three wines, the estate has succeeded to capture the essence of the Santorini terroir making saline, mineral and complex wines.
